Baking Powder Biscuits
Homemade baking powder biscuits — cut in cold fat, knead lightly, and bake until golden.
Steps
- Sift dry ingredients into a mixing bowl. Cut in cold fat until fine as peas.
- Add all the milk at once and mix to form a soft dough that can be handled.
- Toss on a floured board or surface and knead lightly (about 10 strokes) until smooth.
- Roll out to 1/2 inch thick; cut in rounds or triangles.
- Place on ungreased cookie sheet (close together for soft biscuits; 1 inch apart for crisp ones).
- Prick top with a fork.
- Bake at 400°F for 12 to 15 minutes. Makes 12 to 15.
Notes
- Cheese biscuits: add 1/2 cup shredded cheese to the dry ingredients. Bake as above.
