Bara
Fried split-pea fritters seasoned with geera and saffron, served with chutney.
Steps
- In a large bowl mix urdi or ground split peas, flour, baking powder, salt, geera and saffron powder; add garlic and hot pepper.
- Add enough water to make a soft dough. Cover and allow to rest for 1 hour or more.
- To shape bara, take a rounded tbsp of mixture and pat with both hands to flatten to about 1/4" thickness; dip hands in a little water if mixture sticks to hands.
- Heat oil and quickly slip bara into hot oil and fry until set, turning once. Edges might not get brown. Drain on kitchen towel and keep warm. Serve with green mango chutney. Bara can also be made with yeast instead of baking powder.
