Carrot Halwa (Carrot Sweet)
Indian-style carrot halwa cooked down with milk, sugar, and cardamom.
Steps
- Prepare and wash carrots if necessary. Grate them and put into a heavy pan with the milk.
- Cook the mixture steadily, stirring frequently with a spoon until it becomes almost solid. (This can take 3/4 to 1 hour.)
- Now add the sugar, golden syrup, butter and sultanas and cook, taking care to stir continuously, until the mixture starts to leave the sides of the pan. This will take approx. 12–20 minutes.
- Grease a shallow tin and spread the mixture in it evenly.
- Sprinkle with crushed cardamom seeds and decorate with a few blanched almonds or sprinkles if desired. Cool and cut.
