Dinner Rolls
Soft yeast dinner rolls baked until golden.
Steps
- Scald milk and pour in a large bowl.
- Add 1 cup sugar, salt and shortening; cool to lukewarm and stir to melt shortening.
- Dissolve 1 tsp sugar in lukewarm water and over this sprinkle yeast. Let stand for 10 minutes.
- Stir yeast with a fork and add to lukewarm milk.
- Add beaten eggs to milk and yeast mixture and stir.
- Beat in 3 cups flour vigorously by hand or electric mixer.
- Gradually add remaining flour with a strong wooden spoon to form a soft dough.
- Turn dough onto a lightly floured surface and knead for 5 to 10 minutes.
- Shape in a smooth ball and grease top of dough. Place in a greased bowl.
- Cover and allow to rise until doubled in size.
- Punch down dough and allow to rest for 10 minutes.
- Form into desired shape and size. Cover and let rise until doubled. Use a little oil on hands if dough is soft and sticky.
- Bake in a preheated oven at 400°F for 15–20 minutes or until golden. Makes about 45–50 rolls.
Notes
- Variation: Hamburger or hot dog rolls — same recipe but omit one egg.
