Escoveitched Fish
Fried fish marinated overnight in hot vinegar and onions.
Steps
- Wash fish thoroughly in water in which juice of limes or lemons have been added. Dry well.
- Coat fish both sides with the salt and pepper and set aside on paper towel.
- Heat oil in frying pan to boiling point; fry fish slices on both sides nice and crisp.
- Set fish aside in a deep pyrex dish or bowl.
- In a saucepan combine vinegar, sliced onion, pepper strips, pimento seeds, whole black pepper grains and bring to a boil.
- Simmer until onion is tender; remove from fire and cool.
- Pour over fish and leave steeping overnight.
Notes
- If whole fish are used do not slice.
