Onion Bread
Yeast loaf flavoured with fried onion and topped with onion rings.
Steps
- Sift flour and salt into a bowl and leave in a warm place.
- Heat milk and water.
- Pour yeast and sugar over warm liquid. Leave in a warm place until frothy.
- Chop one onion finely and fry for 3 minutes in 1 oz butter. Drain and cool.
- Rub remaining butter into flour.
- Make a well in the centre, pour in the yeast mixture and lightly beaten egg. Add cooked onion. Mix to a soft dough adding more liquid if needed.
- Turn on a lightly floured board and knead well.
- Place in a greased bowl and cover with a damp cloth.
- Meanwhile cut remaining onion in rings and fry until golden brown; drain well.
- Re-knead dough. Shape into a thick square and place in a well greased loaf pan.
- Arrange onion rings on top. Allow to rise.
- Brush gently with beaten egg.
- Bake in a hot oven until golden for 40–45 minutes.
