Prepare a gizzard-and-cracker stuffing, roast turkey slowly until tender and golden.

Steps

  1. Clean and wash gizzard with lime juice; season with salt, garlic, chive and thyme.
  2. Heat oil in a heavy pot and brown a tbsp. of sugar; add gizzard and seasoning and cook for 10 min.
  3. Lower heat and continue to cook for 1 hr. Remove gizzard from heat and mince together with its seasoning.
  4. Heat cooking butter in pot and add onion, celery and pimento; sauté for a few minutes. Add minced gizzard and cook for 10–15 mins.
  5. Meanwhile soak crackers or bread in some water for a minute or two and squeeze to remove excess liquid.
  6. Add softened crackers to gizzard and blend thoroughly.
  7. Stir in Worcester sauce, ketchup, raisins, salt and hot pepper to taste; remove from heat and cool.
  8. Rub the inside and outside of the turkey with salt, pepper and ground seasoning.
  9. Stuff turkey loosely and sew the skin at the opening or use skewers and lace with string or heavy thread.
  10. Brush turkey with melted margarine and with breast side up place on a rack over a roasting pan.
  11. Cover turkey loosely with foil and roast in a preheated oven at 375°F for 2–2 1/2 hrs., basting with fat every 15–20 min.
  12. Reduce heat to 325°F and continue to roast for another 2–2 1/2 hrs. until tender; remove foil for the last hour if necessary to give a golden brown.

Notes

  • Allow 25 minutes per pound for a stuffed turkey; for unstuffed bird deduct 5 minutes per pound. Bread can be substituted for crackers.
