Stuffed Turkey
Prepare a gizzard-and-cracker stuffing, roast turkey slowly until tender and golden.
Steps
- Clean and wash gizzard with lime juice; season with salt, garlic, chive and thyme.
- Heat oil in a heavy pot and brown a tbsp. of sugar; add gizzard and seasoning and cook for 10 min.
- Lower heat and continue to cook for 1 hr. Remove gizzard from heat and mince together with its seasoning.
- Heat cooking butter in pot and add onion, celery and pimento; sauté for a few minutes. Add minced gizzard and cook for 10–15 mins.
- Meanwhile soak crackers or bread in some water for a minute or two and squeeze to remove excess liquid.
- Add softened crackers to gizzard and blend thoroughly.
- Stir in Worcester sauce, ketchup, raisins, salt and hot pepper to taste; remove from heat and cool.
- Rub the inside and outside of the turkey with salt, pepper and ground seasoning.
- Stuff turkey loosely and sew the skin at the opening or use skewers and lace with string or heavy thread.
- Brush turkey with melted margarine and with breast side up place on a rack over a roasting pan.
- Cover turkey loosely with foil and roast in a preheated oven at 375°F for 2–2 1/2 hrs., basting with fat every 15–20 min.
- Reduce heat to 325°F and continue to roast for another 2–2 1/2 hrs. until tender; remove foil for the last hour if necessary to give a golden brown.
Notes
- Allow 25 minutes per pound for a stuffed turkey; for unstuffed bird deduct 5 minutes per pound. Bread can be substituted for crackers.
